Baby Swede With Spiced Yogurt Topping

INGREDIENTS

1 Baby swedes
150 g Greek natural yogurt, 5oz
1 Salad onions, trimmed and
finely
sliced
2 T Coarsely chopped fresh
coriander
Leaves
1/4 t Ground cumin
1/4 t Ground coriander
1/4 Cucumber, finely diced
optional
Salt and freshly ground
black pepper

INSTRUCTIONS

Cook the baby swedes following preferred method of cooking as given  on
the packaging.  Meanwhile, mix together the yogurt, salad onions,
coriander leaves,  spices, cucumber if using and add seasoning to
taste.  Cover and refrigerate the yogurt mixture until required. when
the baby  swedes are cooked, slice down the middle and fill with the
cool spicy  yogurt topping. Eat with the flesh of the swede discarding
the skin.  Notes An excellent lunch or snack on it's own or serve as an
