Baked Apples in Ginger Syrup

INGREDIENTS

4 Bramley apples
Grated rind of 1 lemon
Grated rind of 1 lime
3 tb Water
6 Pieces stem ginger; chopped small (6 to
8)
4 tb Ginger syrup; from the stem
; ginger
1 tb Sultanas
4 Knobs of butter

INSTRUCTIONS

Pre-heat the oven to 180°C/350°F/gas mark 4
Wash the apples and remove the core. Score a line round each apple
about 1/3 way down from the top. Stand the apples in a heat-proof
dish. Mix the syrup and the lemon peel well together. Mix the
sultanas and ginger together and spoon into the centre of each apple.
Drizzle the syrup over the apples, ensuring the syrup goes down the
centre of each apple.
Top each apple with a knob af butter and pour the water into the
dish. Bake in the oven for 45 minutes to an hour, or until the apples
become puffy and tender. Baste at least twice whilst the apples are
cooking. Serve with natural yoghurt or crem. fraiche.
