Baked Eggs with Spinach

INGREDIENTS

2 tb Olive oil
1 Onion; peeled and sliced
; finely
1 pk First Choice spinach leaves or 1 bunch
; spinach
100 g Smoked ham; sliced into thin
; strips
4 lg Tomatoes; peeled and diced
4 First Choice eggs
Salt and ground black pepper
1 Pinches dried thyme

INSTRUCTIONS

Heat the oil in a saut. pan. Add the onion, cook until it softens.
Add the spinach leaves and ham, cook for 1-2 minutes.
Divide into 4 ovenproof dishes, arrange the chopped tomato around the
edge, crack an egg into each dish, season with salt, pepper and thyme.
Cover with tin foil and bake at 200oc for 5-8 minutes until the egg
has firmed.
Serve immediately with warm toast or croissants.
