Baked Finnan Haddie (smoked Haddock)

INGREDIENTS

1/4 c Butter
2 T Flour
2 c Milk
2 lb Finnan haddie, smoked
haddock
1/2 c Bread crumbs
3 T Butter, melted
Salt and pepper
Lemon slices
Parsley

INSTRUCTIONS

10:35:49 -0500  Make a thin white sauce by combining the butter, flour,
milk and salt  and pepper in the top of a double boiler. (combine the
butter and  flour into a paste, cook slightly before adding milk).
Place the fish  in a greased pan and pour the white sauce over it.
Cover and simmer  very gently for half an hour, basting as necessary.
Sprinkle with  bread crumbs which have been mixed with the melted
butter. Bake in a  hot oven for 15 minutes. Remove it a hot platter and
garnish with  parsley and lemon. SERVES: 6 Source:_Out of Old Nova
