Baked Lemon Pudding (diabetic)

INGREDIENTS

3 Eggs, separated
1/4 t Salt
1 T Liquid sweetener
1/3 c Lemon juice
2 T Low fat butter
5 T Flour
1 1/2 c Skim milk

INSTRUCTIONS

Combine egg whites, salt and sweetener. Beat well until peaks form.
Combine yolks with remaning ingredients. Fold egg yolks into whites.
Pour into quart casserole and bake at 350 degrees for 1 hr. Cool
