INSTRUCTIONS
Make 6 incisions into the potato keeping the whole piece together.
Then place in the microwave wrapped in absorbent paper for 6-7
minutes on high.
Then insert the tomatoes and mozzarella slices into the pockets of the
potato, season with salt, pepper and any herbs you like.
Place in a hot oven for 10 minutes to crispen the outside and melt the
cheese. Meanwhile mix together the spinach leaves, lemon, grated egg
and dress with the lemon juice and olive oil.
Pile a bundle of salad in the centre of the plate and then carefully
place the baked potato on top.
