Banana And Pecan Loaf

INGREDIENTS

110 g Unsalted butter; (4oz)
110 g Caster sugar; (4oz)
2 Eggs
110 g Plain flour; (4oz)
1 ts Bicarbonate of soda
1/4 ts Salt
1 ts Ground cinnamon
55 g Wholewheat flour; (2oz)
3 lg Ripe bananas
2 dr Vanilla essence; (2 to 3)
55 g Chopped pecans; (2oz)

INSTRUCTIONS

Cream the butter and sugar together untl light and fluffy. Add the
eggs one at a time beating well. Sif tth eflour, bicarbonate of soda,
salt and cinnamon. Sitr until thoroughly combined. Stir in the
wholehweat flour.
Mash the bananas with a fork then stir inot hte mixture and add the
vanilla and pecans. Pour themoxture into a prepared loaf tin and
smooth the top until level. Bake at 180C/350F/gas mark 4 unitl a
skewer come sout clean 50-60 mintues, coolon a wire rack.
