INGREDIENTS

1 c Sugar
6 tb Plain flour
6 lg Eggs
2 c Milk
4 ts Vanilla
1 ts Salt
4 lg Bananas; cut diagonally into
(4 to 5)
; 1cm. slices
2 tb Sugar; extra
Icing sugar to serve
1 Thick cream to serve

INSTRUCTIONS

Place the cup of sugar, flour, eggs, milk, vanilla and salt in a
mixing bowl and whisk well until the sugar has dissolved and the eggs
are well beaten, about 4 minutes.
Place the sliced bananas in a buttered quiche or flan dish the pour
the liquid ingredients over.
Bake in a preheated oven at 200°c. for 30 minutes or until the top of
the flan is golden and feels set to the touch. Sprinkle the extra
sugar over the surface and grill for 2 minutes, or until sugar has
melted and top is golden.
Serve warm or cold, dusted with a little icing sugar and accompanied
by the fresh cream.
