Banana Fritters

INGREDIENTS

1 c Unsifted flour
2 tb Sugar
1 ts Baking powder
1/4 ts Salt
1 Egg
1/4 c Milk
1 tb Melted butter or margarine
2 tb Drained crushed pineapple
1/4 ts Vanilla
1 sm Ripe banana;peeled and diced
Powdered sugar

INSTRUCTIONS

Mix flour, sugar,baking powder and salt. Combine egg, milk and melted
butter; add to dry ingredients. Blend in pineapple, vanilla and banana.
Drop by teaspoonfuls into deep fat (400 degrees) and fry for 2 minutes or
until crisp and brown.
NOTE: Dip spoon into deep fat between fritters; it makes batter slide off
spoon more easily.
Remove and drain onto paper towels. Dust with powdered sugar and serve at
once.
