Banana Pudding

INGREDIENTS

4 stick butter
4 boxes of vanilla wafers
1 vanilla to taste

INSTRUCTIONS

Yield: 48-60 Child size servings
24    bananas
8 c  sugar
1 c  flour
16    eggs; separated
13 c  milk
8 ts vanilla
4 ds salt
4 ts cream of tartar
Combine sugar, flour, milk, egg yolks and butter and cook in double
boiler until thickened. Remove from heat and add vanilla.Mix well,
taste, and add more if needed. Line (4) 9x13 baking dishes with
vanilla wafers. Alternate sliced bananas, filling and wafers. Beat
1/4 of the egg whites with dash of salt, 1 teaspoon cream of tartar
until soft peaks form. Gradually add 3/4 cups sugar and vanilla to
taste. Beat until stiff,and spread over pudding. Repeat with the
remaining 3 dishes. Bake at 350 for 10-15 minutes.
