Bananas Flambe

INGREDIENTS

1/2 c Brown sugar 125 mL
1/3 c Pineapple juice 75 mL
1/2 ts Cinnamon 2 mL
1/4 ts Nutmeg 1 mL
1/4 ts Allspice 1 mL
8 Bananas 8
1/4 c Dark rum 50 mL

INSTRUCTIONS

In deep skillet, place brown sugar, pineapple juice, cinnamon, nutmeg
and allspice. Stir well and heat until mixture is boiling and smooth.
Peel bananas and cut lengthwise into halves or quarters. Add to sugar
mixture in skillet. Cook for 3 minutes, until hot.
Add rum. When mixture begins to sizzle, flambe it. If it does not
flambe, do not worry - it will still tste great!
