INGREDIENTS

1 lg Eel; (2lbs minimum)
Salt and pepper

INSTRUCTIONS

Cut the fish into 5-6 inch steaks. Season with salt and pepper 20
minutes before putting on a very low barbecue.
Cook very slowly to allow the eel to lose its fat and become crispy.
Serve immediately.
