Basic Corn Filling

INGREDIENTS

4 tb Butter; (60 g)
1 pk Frozen corn; (200 g)
200 g Creamed corn
2 Onions; chopped fine ( 100
; g)
1/2 ts Ginger paste; (2 g)
1/4 ts Garlic paste; (1 g)
2 Green chillies; chopped fine
70 g Coriander leaves; chopped fine
Salt to taste
1 ts Sugar; (5 g)
3 ts Lemon juice; (15 ml)
1 ts Garam masala powder; (5 g)

INSTRUCTIONS

HEAT three tbsp butter in a pan. Add the corn and creamed corn to the
butter and stir-fry for four minutes. Add 1/2 cup water and cook the
corn for ten minutes.
Heat the remaining butter in another pan and fry the onions well. Add
the ginger paste, garlic paste, green chillies and coriander leaves
and stir well. Add the corn mixture and keep stirring until dry. Add
sugar, lemon juice and the garam masala powder. Mix well.

NOTES : This basic corn filling recipe serves as a starting point for
appetisers like corn cups, corn baskets, corn cones, corn toast and
corn stuffed mushrooms. Makes 3 cups ( 600g )
