INGREDIENTS

Oriental flavored vegetable cooking spray
1 lg Onion; chopped
1 sm Head cabbage; cut in large chunks
6 md Red potatoes; unpeeled, cubed
3 Carrots; sliced
3 Cloves garlic; minced
4 ts Ginger root; minced
1/2 c Vegetable stock
1 1/2 ts Tamari soy sauce
Salt and pepper; to taste
4 tb Fat-free sour cream

INSTRUCTIONS

Spray large skillet with cooking spray; heat over medium heat until
hot. Add onion, cabbage, potatoes, carrots, garlic, and gingerroot;
spray with cooking spray and saute until lightly browned, about 8
minutes.
Add stock and soy sauce and cook, covered, over medium heat until
vegetables are just tender, about 5 minutes. Season to taste with
salt and pepper.
Spoon hash onto plates; top each serving with a tablespoon of sour
cream.
Per serving: 212 Calories; 1g Fat (4% calories from fat); 7g Protein;
46g Carbohydrate; 3mg Cholesterol; 523mg Sodium
