Cabbage With Rice Soup

INGREDIENTS

1 c Rice
1 Head of cabbage, about 3
lbs. cleaned and diced
4 Bacon
3 T Margarine
1 16 oz tomatoes drained
and cut up
3 T Fresh parsley, chopped
2 Cloves garlic
7 c Chicken broth
1/2 c Grated Parmesan cheese
Salt and pepper to taste.

INSTRUCTIONS

Cook bacon in margarine for a few minutes, stirring occasionally. Add
tomatoes, parsley and garlic. Simmer for about 10 minutes. Remove
garlic and add the cabbage. Cover and simmer for 20 minutes. Add
broth, salt and pepper. Cover and simmer for another hour. Add rice
and cook for 30 minutes. Sprinkle with cheese and serve.  Posted to
