INGREDIENTS

1 lb Hot bulk pork sausage
1 Onion, chopped
1 Green pepper, chopped
1 1/2 Stalks celery, chopped
1 1.15 ounce envelope instant
chicken noodle soup mix
1 c Uncooked long-grain rice
3 c water

INSTRUCTIONS

Brown sausage in a Dutch oven, stirring to crumble; drain. Add
remaining ingredients, and stir well. Place mixture in a lightly
greased 12" x 8" x 2" baking dish. Cover and bake at 350 degrees F  for
1 hour until moisture is absorbed.  Yield: 8 servings.  _The Southern
