INGREDIENTS

2 tb Olive oil
1/2 lb Cajun sausage – casings removed
1 Diced yellow onion
1 Diced red bell pepper
1 Minced red chili pepper
2 Minced garlic cloves
1 ts Dried thyme
1 ts Dried oregano
2 ts Cajun seasoning
1/2 c Tomato sauce
1/2 c Beef broth
1/4 c Seasoned bread crumbs
2 lb Ground beef

INSTRUCTIONS

Directions: In a large saut. pan, heat the olive oil. Saut. the
sausage, onion, bell pepper, chili pepper, garlic, thyme, oregano and
Cajun seasoning for 15 minutes, stirring often until onion and bell
pepper are soft. Transfer mixture to a large bowl and cool to room
temperature. Add the tomato sauce, beef broth, bread crumbs, and
ground beef. Mix until well combined. Place mixture into a standard
size loaf pan. Bake at 350 degrees for 45 minutes. Let rest for 10
minutes before serving.
