Cajun Red Snapper

INGREDIENTS

1 lb Fresh red snapper (fillets)
1 c Sliced celery
1 c Chopped bell peppers
1/2 c Minced onion
1 ts Garlic powder
1/2 ts Bay leaves
1/2 ts Pepper
4 c Prepared chicken bouillon
2 cn (16 oz.)cajun style stewed tomatoes (drained)
1 cn (6 oz.) tomato juice
4 c Rice

INSTRUCTIONS

Preheat oven 400 . Cut catfish into small pieces. Combine all ingredients
(except rice) in shallow baking dish. Stir well to combine. Bake for
approx. 20 minutes or until catfish is tender and fully cooked. Serve over
cooked rice. Serves eight. busted by sooz
