INSTRUCTIONS
Salt hens, both sides. Mix celery, onions, mushrooms and rice together.
Heap rice in 4 mounds in a baking dish. Place 1/2 hen, skin side up, over
each mound. Cover with foil. Bake at 350 degrees for 1 hour. Remove foil.
Bake until browned.
