Canadian Baked Eggs

INGREDIENTS

4 sl Canadian bacon
8 Eggs
1 1/2 c Shredded fat-free cheddar cheese
2 ts Parsley; finely chopped

INSTRUCTIONS

Prep: 5 min, Cook: 15 min. Preheat oven to 325°F. Line bottom of 4 lightly
buttered shallow ramekins or individual gratin dishes with bacon, cutting
to fit, if necessary. Carefully break 2 eggs into each dish. Sprinkle
cheese over top and bake 12-15 minutes, until whites are just set and
cheese is melted. Sprinkle with parsley and pepper to taste before serving.
