1 lb Chuck or Round Steak; Cubed
1 lb Pork Loin; Cubed
1 lg "Ruskin Sweet" Onion; chopped
5 Cloves Garlic
1/4 c Chili Powder
Crushed Red Pepper; to taste
12 oz Tomato Paste
12 1/2 oz Beef Broth
2 ts Oregano
1 cn (12 oz) "Bud" Beer
1 tb Corn Meal
Hot water for paste
Salt and Garlic Salt; to taste
6 Corn Tortillas
Sour Cream
sm Sweet Banana Peppers

INSTRUCTIONS

GARNISH

Chili Team: Lynn, Sandy and Anne
Spice and Seasoning may vary according to personal taste.
Brown meat, saut. onion; add the remaining ingredients except for Corn Meal
and hot water. Simmer for two (2) hours. Mix corn meal and hot water to
make a light paste, add to chili at least 30 minutes before serving.
To serve, place warmed corn tortilla in bowl, add chili, top with a dollop
of Sour Cream and garnish with a sweet banana pepper. Serves 6.
