Caramelised Pineapple With A Coconut And Rum Cream

INGREDIENTS

300 g Caster sugar, 11oz
1 Pineapple cut into rings
250 Double cream, 10fl oz
4 T Double cream, from a tin
50ml
4 T Dark rum

INSTRUCTIONS

Melt the sugar and caramelise in a wide shallow pan, add splash of
water to stop process. Add the pineapple and cook for 10 mintues.
Meanwhile combine the rest and whip until stiff. Serve the pineapple
