Caramelised Pineapple with a Coconut And Rum Cream

INGREDIENTS

300 g Caster sugar; (11oz)
1 Pineapple cut into rings
250 ml Double cream; (10fl oz)
4 tb Double cream; (from a tin) (50ml)
4 tb Dark rum

INSTRUCTIONS

Melt the sugar and caramelise in a wide shallow pan, add splash of
water to stop process. Add the pineapple and cook for 10 mintues.
Meanwhile combine the rest and whip until stiff. Serve the pineapple
on plates and garnish with the cream.
