Caramelized Onion Gratin

INGREDIENTS

2 tb Olive oil
4 lg Onions; julienne
2 c Heavy cream
4 Eggs
3 Cloves garlic
1 c Bread crumbs
1/4 c Grated parmesan cheese
1 ts Cracked black pepper

INSTRUCTIONS

Heat oil in a very large saute pan over high heat until smoking hot.
Add onions and let brown well before moving about 2-3 minutes. You
want the onions to caramelize but not burn. Allow to caramelize on
all sides about 6-8 minutes total. If you feel the onions are burning
reduce the heat to medium-low. Place the onions in a greased
casserole dish and set aside. In a small bowl whisk together cream
eggs and garlic and season with salt and pepper. Pour custard over
the caramelized onions. In another small bowl mix bread crumbs and
parmesan cheese. Spread the bread crumbs over the top of the onions.
Place in a 350 degree oven
