Carefree Vegetable Chili

INGREDIENTS

1 tb Olive oil
1 lg Onion; chopped into
; 1/2-inch pieces
1 cn Crushed tomatoes; undrained (28
; ounces)
2/3 c Picante sauce
1 1/2 ts Chili powder
1 1/2 ts Ground cumin
3/4 ts Salt
2 cn Red kidney beans; rinsed and drained
; (16 ounces each)
1 lg Red bell pepper; chopped
1 lg Zucchini; cut into chunks
1 Medium-sized yellow; (summer) squash, cut
; into chunks
; (optional)

INSTRUCTIONS

In a large saucepan, heat the oil over medium heat. Saute' the onion
for 2 to 3 minutes. Add the tomatoes, picante sauce, chili powder,
cumin, and salt. Reduce the heat to low, cover, and simmer for 10
minutes. Add the remaining ingredients, cover, and simmer for 10
minutes.
NOTE: Serve with additional picante sauce, if desired. For a change of
flavor, sometimes I add a little garlic or hot pepper sauce, or even
use a different kind of beans.
