Carolina Dream Cake

INGREDIENTS

1 c Butter or margarine, softened
2 c Sugar
1 ts Vanilla extract
3 1/4 c Sifted all-purpose flour
3 1/2 ts Baking powder
3/4 ts Salt
1 c Milk
8 Egg whites
Carolina Dream Frosting Separate recipe

INSTRUCTIONS

Cream butter; gradually add sugar, beating well at medium speed of an
electric mixer.  Add vanilla, mixing well.
Combine flour, baking powder, and salt; add to creamed mixture
alternately with milk, beginning and ending with flour mixture.  Mix
well after each addition.
Beat egg whites (at room temperature) until stiff peaks form; fold
whites into batter.
Grease three 9-inch round cake pans, and line with wax paper; grease wax
paper.  Pour batter into prepared pans; bake at 350 for 18 to 20 minutes
or until a wooden pick inserted in center comes out clean. Cool in pans
10 minutes; remove from pans, and let cool completely on wire racks.
Spread Carolina Dream Frosting between layers and on top and sides of
cake.  Yield: one 3-layer cake.
Di Note:  A very elegant cake that I use around the holidays, last
used at a dinner party for 12.
