Name: Carrot Pudding Puff
Ingredients: 1/2 c Margarine, melted; 1/2 c Brown sugar; 1 ts Salt; 1 tb Lemon juice; 1 1/2 ts Vanilla; 2 Egg yolks, beaten; 1 1/2 c Sifted flour; 2 c Cooked carrots--mashed; Or 2 lb.can drained and; Mashed; 1/2 ts Baking powder; 1/2 ts Baking soda; 2 Egg whites, stiffly beaten; 1 1/2 or 2 quart greased casserole dish.

INSTRUCTIONS

Combine all ingredients, folding the egg whites in last. Pour into a
Bake at 350 for 1 hour.
