INGREDIENTS

2 lb Carrots; shredded
3 cn (5.5-oz) pineapple chunks (in own juice)
1 tb Nutmeg (or more if you like it-I use a lot)

Mix all together and let sit in the fridge over night.  It's very
refreshing. I have also substituted one can of pineable chunks with 2/3 cup
dried cranberries or dried cherries. However, their flavor sort of got lost
and the pineapple is cheaper.
:-)  This will keep in the fridge 4-5 days.
