Carrot Salad With Mint And Currants

INGREDIENTS

1 lb Carrots, peeled and grated
1/4 c Lemon juice
1/2 t Salt
2 Cloves garlic, crushed
1 Pinches fresh ground white
pepper
3 T Olive oil
2 T Minced chives
1/4 c Minced mint
3 T Currants

INSTRUCTIONS

Whisk together the lemon juice, salt, garlic, pepper and oil.  Add the
carrots and toss. Add the chives, mint and currants.  Serve over tender
lettuce: such as bib or butter lettuce.  Converted by MC_Buster.
