Carrot Salad with Mint And Currants

INGREDIENTS

1 lb Carrots; peeled and grated
1/4 c Lemon juice
1/2 ts Salt
2 Cloves garlic; crushed
1 Pinches fresh ground white pepper
3 tb Olive oil
2 tb Minced chives
1/4 c Minced mint
3 tb Currants

INSTRUCTIONS

Whisk together the lemon juice, salt, garlic, pepper and oil.
Add the carrots and toss. Add the chives, mint and currants.
Serve over tender lettuce: such as bib or butter lettuce.
