Casbah Couscous Pudding

INGREDIENTS

4 Egg Yolks
2 ts Vanilla Extract
3 tb Sugar; Or Honey
1 Orange Rind; Grated
1/2 ts Salt
1 qt Milk
1/3 c Couscous
Cinnamon; For Garnish

INSTRUCTIONS

Combine egg yolks, vanilla, sugar, orange rind and salt in a small bowl. In
a medium saucepan combine milk and couscous and heat just to boiling.
Remove from burner. Add egg mixture and return to burner. Heat to a boil
while stirring until thick and creamy. Let stand 5 minutes. Pour into
dessert bowls. Sprinkle with cinnamon and cool.
