Cashew Croquettes

INGREDIENTS

1 c Lightly toasted cashews
2 tb Toasted sesame seeds
1 tb Minced garlic
1/3 c Finely chopped green onions
1/2 c Dry bread crumbs; Panko preferred
1 lg Egg; plus
1 Egg white; lightly beaten
1/4 c Low-fat yogurt
1/4 c Low-fat ricotta or cottage cheese
1 ts Grated lemon zest
2 tb Chopped chives; optional
1/4 ts Cayenne pepper
1 ts Sea salt
Olive oil; for sauteeing

INSTRUCTIONS

Add cashews to a food processor and process in short bursts until
finely chopped but not ground. Transfer to a mixing bowl and stir in
the sesame bread crumbs. In a separate bowl stir the eggs yogurt,
ricotta, zest, chives, cayenne and salt. Stir this into the nut
mixture until well combined. Form into 6 patties and cook in olive
oil in a saute pan over moderate heat until golden brown on both
sides. Serve immediately with your choice of a savory sauce or
topping. This recipe yields 4 to 6 servings.
