It is the brightest star that ever cast its radiance over the darkened soul, and one that seldom sets in the gloom of morbid fancies and forboding imaginations.

Catfish with Pecans

INGREDIENTS

2 lb Catfish fillets
1 c Flour
1 ts Salt
1/4 c Butter
1/4 ts Ground red pepper
1 ts Grated lemon peel
1/2 c Fine chopped pecans
1/4 c Melted butter
1 tb Lemon juice
Twist of lemon
1 ts Worchestershire
Parsley

INSTRUCTIONS

SAUCE
Combine flour, salt, pepper and lemon rind. Dredge fillets in flour
mixture. Melt butter in skillet and cook fillets on both sides until
lightly browned. Remove and place in oblong baking dish. Combine sauce and
pour over fillets. Bake at 350 for 12 minutes or until catfish flakes
easily. Garnish with parsley.
