Home Studio is a nice package. I used Sonic Foundry Sound Forge for quite a while before upgrading to a multi-track system and it also works well.

The primary thing you may run into is providing a proper signal level from the mics to the sound card. You didn't mention what mics you're using now. Do they plug directly into your tape recorder? Or do you run them through a mixer first? What brand and model are they? With that info we can provide a bit more specific help.

Also, make sure you have lots of disk space. A wav file of a 20 minute service at our church is easily over 200Mb in size.
