INGREDIENTS

1 1/3 c Pitted dates (approx. 8 oz.)
1 c Boiling water
1 1/2 c Flour
1 ts Baking soda
1/4 ts Salt
1/2 c Shortening
1 c Sugar
1 ts Vanilla extract
2 Eggs
3/4 c Chopped walnuts

INSTRUCTIONS

Grease and lightly flour 13x9x2 baking pan. Combine dates and boiling
water.  Let cool to room temperature.  Stir together flour, baking soda and
salt.  In a large bowl, beat shortening about 30 seconds. Add sugar and
vanilla and beat until fluffy, about 2 minutes. Add eggs one at a time,
beating one minutes after each addition.  Add flour mixture and dates
(incl. water) alternately, beating after each addition. Stir in nuts.
Spread into pan and bake at 350 degrees for 30 to 35 minutes.
