Dry Salami and Mushroom Bolognese

INGREDIENTS

8 oz Sliced Monterey Mushrooms
4 oz Sliced Dry Salami; (minced)
1 Yellow onion; (chopped)
3 Cloves garlic; (minced)
1 bn Italian parsley; (chopped)
2 tb Fresh oregano; (chopped)
1/4 c Red wine
2 tb Olive oil
2 ts Salt
2 tb Black pepper
1/4 ts Dried crushed red chilies
1 cn (12 Oz.) crushed tomatoes

INSTRUCTIONS

In a blender place mushrooms, salami and next four ingredients. Blend till
finely chopped. Heat oil in large sauté pan and add mushroom mixture. Sauté
for 5 minutes or until liquids are gone. Deglaze pan with red wine and
reduce out. Add remaining ingredients; cook for 10 minutes. Pour over your
favorite pasta and enjoy. Serves 4
