Eileen Fulton’s "wild" Grits

INGREDIENTS

1 c White hominy grits
5 c Boiling water
1 1/2 t Salt
1/2 t Baking soda
1 c Parmesan cheese, freshly
grated
Freshly ground black pepper
1 Egg, beaten
1 T Milk
1/2 c Italian bread crumbs
2 T Butter
1 Scant tsp. instant onion
flakes

INSTRUCTIONS

Add grits to boiling salted water. Reduce heat, simmer 25-30 minutes,
stirring occasionally. Cool for 30 minutes. Add baking powder, 3/4 cup
cheese, onion and pepper. Mix well. Combine egg and milk; add to
cooked grits. Pour mixture into well-greased 2 quart baking dish. Top
with breadcrumbs and remaining cheese. Dot with butter. Bake in
preheated 350 F. oven 25 minutes, or until browned on top. Great with
