Ensalada De Naranjas Y Cebollas – (Orange And Onion Salad)

INGREDIENTS

3 lg Navel oranges -; (perfect)
1 md Red onion
2 tb Blanched sliced almonds
1/2 ts Sugar
3 tb Red wine vinegar
6 tb Extra-virgin olive oil
9 Wine grapes
2 Scallions; sliced lengthwise,
Paper thin
Salt; to taste
Freshly-ground black pepper; to taste

INSTRUCTIONS

Remove peel and pith from oranges and slice into 1/8-inch slices and lay on
platter. Slice red onion paper thin and lay rings over oranges. Sprinkle
almonds over oranges. In a small bowl, whisk together sugar, vinegar and
oil to emulsify, and pour over salad. Sprinkle with wine grapes and
scallions and season lightly with salt and pepper. This recipe yields 4
servings.
