Fantasy Meat Pie

INGREDIENTS

1/4 c Beef broth
1/2 c Cherries; dried
1/4 c Dried apricots; chopped
1 lb Ground pork; lean
1 ts Crystallized ginger; chopped
1/2 c Onions; chopped
1/4 c Fresh parsley; chopped
1/2 ts Sage; rubbed
1/2 ts Salt
1/4 ts Fresh ground black pepper
1 Egg; beaten
Vegetable oil spray

INSTRUCTIONS

1.Preheat oven to 375 F.
2.Warm the beef broth. Soak the cherries and apricots in it for 10 to 15
minutes, until they plump up.
3.Mix the pork, ginger, onion, parsley, sage, salt, pepper, and egg
together in a large bowl. Add the cherries and apricots with the broth and
mix well.
4.Spray an 8 or 9 inch pie plate with vegetable oil spray. Press the meat
mixture into it and smooth the top of the meat. Bake for approximately 35
to 45 minutes, or until and instant-read meat thermometer registers 155 F.
Allow the pie to rest for 10 minutes.
