INGREDIENTS

1 c All-purpose flour
1/2 t Baking powder
1/2 t Ground ginger
1/2 t Ground cinnamon
1/4 t Baking soda
1 ds Salt
1 Slightly beaten egg white
1/3 c Molasses
1/3 c Water
2 T Applesauce

-0600  (adaptation of a recipe from the Better Homes & Gardens New
Dieters'  Cookbook) Line 8 muffin cups with paper bake cups. In medium
bowl,  stir together the first 6 ingredients. In a small bowl
thoroughly  combine the egg white, molasses, water, and applesauce.
Dump it in  the flour mixture and stir till completely blended. Spoon
mixture  into muffin cups. Bake at 350 degrees for 15-20 minutes;
sprinkle  with powdered sugar if desired.  REC.FOOD.RECIPES ARCHIVES
