INGREDIENTS

2 1/2 c Lite silken tofu; (firm or xtra firm) this is one package of Mori-Nu
1 1/2 ts Olive oil
1/8 ts Crushed red pepper
3 Scallions; chopped, I used yellow onions
3 Cloves garlic; minced
1/3 c Green bell pepper; chopped
1/4 ts Turmeric
1 tb Tamari soy sauce
3/4 c Chunky salsa; mild or hot, I used pace medium
3 tb Tequila; to 4 tbsp
1 tb Lime juice
1/4 c Fresh cilantro; chopped

INSTRUCTIONS

Drain tofu, and mash with a potato masher. Microwave on high for 2 1/2
minutes. Place in a fine mesh strainer.
Heat the olive oil and red pepper flakes. Add the onions, garlic, and bell
pepper. Saute for about 3 minutes, or until crisp tender. Add the drained
tofu, and continue to cook for 5 minutes, stirring frequently. Stir in
remaining ingredients. Reduce heat, and simmer 5 more minutes or until
ready to serve.
Serve with warm whole wheat tortillas and extra salsa.
Per serving: 12 gm protein, 7 gm carbs, 2 gms fiber, 4 gm fat (26%)
