Figs with Ricotta

INGREDIENTS

15 Figs
1 c Ricotta cheese
2 tb Ground almonds
1 ts Grated lemon rind
1 ts Grated orange rind
1 ts Vanilla extract
1 ts Almond extract
1/4 c Honey
Chopped toasted pistachios

INSTRUCTIONS

Remove stems from figs. Cut almost in half, open up to stuff. In food
processor mix together ricotta, ground almonds, lemon & orange rind,
vanilla & almond extract & honey. Process to blend. Stuff each fig with
flavored ricotta. Garnish with toasted nuts.
Approximately 4-6 minutes.
Per serving: 1354 Calories; 43g Fat (27% calories from fat); 38g Protein;
225g Carbohydrate; 124mg Cholesterol; 220mg Sodium
