Fillet Of Salmon Poached In Lemon And Wine

INGREDIENTS

1/3 c Lemon juice
1/2 c Dry white wine
4 Salmon fillets
2 T Minced parsley

INSTRUCTIONS

In a large skillet over medium-high heat, bring lemon juice and wine
to a boil. Lower heat to medium. Add salmon and cover skillet. Poach
salmon until it flakes when pressed with a fork (5 to 8 minutes).
Remove from poaching liquid and serve immediately, sprinkled with
