Flounder El Capitan

INGREDIENTS

1 lb Flounder fillets
1/2 Lemon
Paprika
2 tb Butter or margarine
2 tb Flour
1 ds Salt and pepper
3/4 c Milk
1/4 c Dry white wine
1 c Shredded extra sharp cheese

INSTRUCTIONS

Wash and pat dry fillets. Place in greased shallow baking pan making sure
not to overlap. Squeeze lemon juice over fillets and sprinkle with paprika.
Melt butter in medium saucepan. Add flour, salt and pepper. Stir until
mixed. Add milk and white wine. Bring to a boil, stirring constantly.
Remove from heat and add shredded cheese. Pour over fillets and bake at 350
about 30 minutes. Place under broiler for 1 minute to lightly brown on top.
Serve immediately. Serves 3-4.
