For-1: Chicken With Hot Peanut Sauce

INGREDIENTS

1 T Smooth peanut butter
2 t Soy sauce
2 t Wine vinegar
pn Hot pepper flakes
1 Chicken breast, boneless
skinless [=1/4 lb]
1 t Vegetable oil
2 t Garlic, minced
1 t Gingerroot, minced

INSTRUCTIONS

In measuring cup, stir together 1/4 cup water, peanut butter, soy
sauce, vinegar and hot pepper flakes.  Cut chicken into 1/2-inch cubes.
in nonstick skillet, heat oil over  medium-high heat; cook chicken,
garlic and ginger, stirring, for 2-3  minutes or until chicken is no
longer pink inside. Stir in peanut  butter mixture and bring to boil;
reduce heat to low and cook,  stirring, for 3 minutes or until
thickened.  Per Serving: about 280 calories, 32 g protein, 14 g fat, 7
