INGREDIENTS

1 tb Smooth peanut butter
2 ts Soy sauce
2 ts Wine vinegar
pn Hot pepper flakes
1 Chicken breast, boneless, skinless, [=1/4 lb]
1 ts Vegetable oil
2 ts Garlic, minced
1 ts Gingerroot, minced

INSTRUCTIONS

In measuring cup, stir together 1/4 cup water, peanut butter, soy sauce,
vinegar and hot pepper flakes.
Cut chicken into 1/2-inch cubes. in nonstick skillet, heat oil over
medium-high heat; cook chicken, garlic and ginger, stirring, for 2-3
minutes or until chicken is no longer pink inside. Stir in peanut butter
mixture and bring to boil; reduce heat to low and cook, stirring, for 3
minutes or until thickened.
Per Serving: about 280 calories, 32 g protein, 14 g fat, 7 g carbohydrate
