Fortune Cookies

INGREDIENTS

3 tb Butter or margarine
3 tb Sugar
1 Egg white
1/2 c Flour

INSTRUCTIONS

Mix until well blended. Add 1/2 cup flour and mix again until well blended.
Dip a glass or cutter 3" in diameter into flour and press on greased cookie
sheet to give an outline for cookies. Spread cookie batter to outline. Bake
at 400~ for 3-4 min ( make a couple at a time). Work fast before they cool
to shape them as a fortune cookie. ( I fold them in half and then fold them
against a side of a bowl, coffee mug or pan, whatever is handy to shape
them like a fortune cookie). I also make my own little fortune on pieces of
paper to slip into the cookie before folding. These are fairly easy to
make, the hardest part is folding them while they are still hot from the
oven. I also spread them fairly thin and take them out of the oven before
they are too brown. In fact they are mostly brown just around the edges.
They are very good.
