French Onion Soup with Miso

INGREDIENTS

1 tb Vegetable oil
4 lg Yellow onions; thinly sliced
3 tb Dark miso
2 c Water
4 sl French bread
1 tb Dijon-style mustard
1 c Shredded reduced-fat Swiss cheese. or soy

INSTRUCTIONS

1. Heat a large heavy pot over medium heat. Add oil and onions and toss to
combine. Cook over very low heat for 1-1/2 to 2 hours, stirring every 15 to
20 minutes. 2. Dissolve mis0 in 1/2 cup water and add to pot along with
remaining water Bring to a boil, stir well, and remove from heat. 3.
Preheat broiler. Divide hot soup between 4 individual oven-proof bowls.
Spread bread slices with mustard and place mustard-side down on top of
soup. Sprinkle equal amounts of cheese over bread. 4. Place bowls under
