Fresh Coconut Cake

INGREDIENTS

Use any good white cake mix
2 c Sugar
1/4 c White Karo
1 Coconut, fresh, grated
2 Egg whites, beaten stiff
3/4 c Water

INSTRUCTIONS

CAKE
ICING
CAKE Prepare the cake mix according to directions using the coconut milk
(adding water) for the liquid required in the cake mix. ICING Combine
sugar, Karo and water and boil until it forms a hard ball. Beat slowly into
the beaten egg whites until it is a good consistency to spread. Cover the
bottom cake layer with icing and about one third of the grated coconut.
Cover with top layer of cake and ice top and sides. Use the remaining
grated coconut on the top and sides of the cake. Beautiful and delicious!
