Fresh Fruit in a Cool Ginger Broth

INGREDIENTS

Assorted Fruits Including: Peaches, Berrie, berries, kiwis, fresh currants, mango, etc.
1 c Pineapple juice
Juice of 2 lemons (about 1/4 cup)
3 tb Honey
2 tb Grated fresh ginger
1/3 c Grand Marnier

INSTRUCTIONS

Peel and cut the fruit. Count out fruit yielding 4 portions; for example, 2
peaches would be plenty. In a saucepan combine pineapple juice, lemon
juice, honey, ginger, and Grand Marnier. Bring quickly to a boil, reduce to
a simmer, and cook 5 minutes before removing from the heat. Cool
completely, either in an ice-bath or in the refrigerator. When ready to
serve, assemble fruit onto plates or bowls. Ladle broth over fruit. Serve.
Yield: 4 servings
